Or, to simplify, purchase a store-bought cooked barbecued chicken, shred the meat and stir through a jar of chilli jam. This can be done at home before heading out.
Once at your destination, layer the corn chips on a serving tray, top with cheese, if using, layer on the salad, then top with the chicken and lime wedges.
